Warm, gooey, and full of cozy spice, these Spiced Chocolate Oatmeal Cookies are the perfect balance of comfort and indulgence. The rich cocoa pairs beautifully with cinnamon and nutmeg, while the oats add a soft, chewy texture that makes them irresistible straight from the oven. Pair them with a cup of tea or a glass of milk for the ultimate treat.

Ingredients

  • ½ tablespoon cinnamon

  • 1 teaspoon nutmeg

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup (4 oz / 115 g) butter, room temperature

  • ½ cup (4 oz / 115 g) granulated sugar

  • ½ cup (3 oz / 85 g) dark brown sugar

  • 1 large egg

  • ½ tablespoon vanilla extract

  • 1 ½ cups (4 ½ oz / 128 g) rolled oats

  • ½ cup all-purpose flour (spooned and leveled)

  • ¼ cup 100% cocoa powder

  • Optional: 2 tablespoons powdered sugar, for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream the butter and both sugars together until light and fluffy. (Make sure your butter is room temperature for best results.)

  3. Add the vanilla extract and egg, then mix until well combined.

  4. In a separate bowl, whisk together the flour, cocoa powder, cinnamon, nutmeg, baking soda, and salt.

  5. Fold the dry ingredients gently into the wet mixture until just combined — avoid overmixing to keep your cookies soft.

  6. Add the rolled oats and fold until evenly incorporated.

  7. Using a cookie scoop, drop spoonfuls of dough onto your prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 11 minutes, or until the edges are set but the centers remain soft and gooey.

  9. Allow cookies to cool slightly, then sprinkle with powdered sugar if desired.

Notes

  • These cookies store beautifully in an airtight container for up to 4 days.

  • Try adding chocolate chips, walnuts, or a drizzle of melted white chocolate for extra flair!
